Turkey Fried Rice
TURKEY FRIED RICE
After Thanksgiving, you may run out of ideas for leftover turkey… Here’s a recipe that will be sure to be a new favorite.
INGREDIENTS (Serves 4)
Water
1¼ lbs. boneless, skinless turkey breast, cut into 1″ cubes
Salt and black pepper
2 eggs
1 (15 oz.) can peas and carrots combo, drained
½ white onion, chopped
2 C. ready-to-eat rice
⅓ C. soy sauce
3 T. sesame oil
3 chopped green onions
Orange juice
DIRECTIONS
Preheat the oven to 400° and grease or line a rimmed baking pan with foil. Place the turkey in a single layer on the prepped pan; season with salt and pepper. Bake for 5 minutes.
In a small bowl, whisk the eggs. Pour onto the hot pan and bake 3 to 4 minutes more until the egg is cooked. Use a fork to break up the egg into tiny pieces.
Add the peas and carrots, onion, and rice to the hot pan. Drizzle with soy sauce and sesame oil, toss to coat, and arrange the food in a single layer; sprinkle the green onions on top. Bake 10 to 15 minutes more or until the turkey is no longer pink.
Stir and drizzle with a little orange juice before serving.
