ONE DISH SMOTHERED CHICKEN MEAL

INGREDIENTS (Serves 6)

1 (10 oz.) pkg. plain couscous
2 C. water
1 T. olive oil
1 (2.25 oz.) jar sliced dried beef
6 boneless, skinless chicken breast halves
Black pepper to taste
1 (10.75 oz.) can cream of chicken soup
1 C. sour cream
¼ C. cooked crumbled bacon

DIRECTIONS

Preheat the oven to 350°F. Dump the couscous into a greased 9×13″ baking dish. Stir in the water and oil; spread evenly and let stand for 5 minutes. 

Rinse and coarsely chop the dried beef and scatter over the couscous. Top with the chicken breast halves and season with pepper. 

Stir together the soup and sour cream and spread evenly over the ingredients in the baking dish. Sprinkle with the bacon.

Cover and bake for 40 minutes; uncover and bake 10 minutes longer or until the chicken is fully cooked. 

Lightly stir the couscous and serve with the chicken.
