INGREDIENTS (Serves 2)
Sugar
½ tsp. lemon zest
1 T. butter
½ C. flour
¾ tsp. baking powder
¼ tsp. salt
⅓ C. milk
1 C. fresh blueberries
Whipped cream (optional)
DIRECTIONS
Mix 1 tablespoon of sugar with the lemon zest and set aside.
Put 1½ teaspoons of butter into two half-pint mason jars or other microwave-safe dishes. Microwave until melted, then brush the butter around to coat the inside of the jars; sprinkle a little sugar all around the insides.
In a bowl, whisk together the flour, baking powder, salt, and ¼ cup sugar; whisk in the milk. Divide the batter evenly among the mason jars.
In a clean bowl, lightly mash the berries and stir in 1 teaspoon of the set-aside lemon-sugar mixture. Divide the berries over the batter and sprinkle with the remaining lemon-sugar.
Cover with paper towels and microwave on high 2 to 3 minutes, checking every 30 seconds until done. Serve with whipped cream.
