EASY BAKED GRANOLA BARS
Start by making our Homemade Granola. After it’s baked, use it as the starting point for the granola bars. Then add in the ingredients for the granola bars, press into a pan, and bake. You’ll never go back to eating those boxed bars again.
INGREDIENTS (Makes 16)
1⅔ C. Homemade Granola (see recipe below)
1 C. chopped dates
1 C. unsweetened raw chip coconut
3 T. stevia brown sugar baking blend (or ⅓ C. brown sugar)
½ C. whole-wheat flour
1 tsp. cinnamon
1 (15 oz.) can pinto beans (drained, rinsed & chopped)
½ C. raisins
½ C. chopped walnuts
½ C. honey
3 T. melted coconut oil
2 T. canola oil
1 tsp. vanilla
⅛ tsp. salt
DIRECTIONS
Preheat the oven to 350°. Line a 9 x 13” baking pan with foil and coat with cooking spray.
In a bowl, combine the Homemade Granola, dates, coconut, brown sugar baking blend, flour, and cinnamon. Stir in the pinto beans, raisins, and walnuts; set aside.
In a small bowl, combine the honey, coconut oil, canola oil, vanilla, and salt. Pour over the granola mixture and stir well. Spread into the prepped pan and bake 35 to 40 minutes or until the center is firm and the edges are browned. Cool completely.
Lift from the pan and cut into bars. Can be wrapped and frozen for up to 3 months. Healthy carbs for delicious energy!

HOMEMADE GRANOLA
Preheat the oven to 325°. Line a large rimmed baking sheet with foil and coat with cooking spray.
In a big bowl, mix 4 C. old-fashioned oats, 1 C. Rice Krispies cereal, 1 C. Kix cereal, ½ C. flaked coconut, ½ C. oat bran, ¼ C. sliced almonds, ¼ C. sunflower nuts, and 3 T. brown sugar; set aside.
In a small saucepan over medium heat, bring ¾ C. pineapple juice and ½ C. apple juice to a boil. Cook until reduced to ⅔ C., about 10 minutes. Stir in ¼ C. honey. Drizzle the warm juice mixture over the oats mixture, tossing well. Spread onto the prepped pan and bake for 40 minutes or until golden brown, stirring occasionally. Cool slightly.
Stir in ¼ C. dried blueberries (or other dried fruit) and cool completely. Store in an airtight container. Toss into a bowl with milk, munch as a snack, or use in other recipes.
