Creamy Crockpot Sausage And Potato Soup
CREAMY CROCKPOT SAUSAGE AND POTATO SOUP
This hearty and filling soup is perfect for lunch or dinner. Preparation is easy, and can me served with toasted sourdough bread or breadsticks. If you add broccoli, kale or celery, you’ve got a complete, nutritious and delicious meal for the family or guests.
INGREDIENTS
1 pound ground mild Italian sausage
1 (2-pound) bag frozen diced potatoes or freshly cut raw potatoes
1/2 teaspoon black pepper
1/4 teaspoon salt
4 cups chicken broth
4 cups broccoli or kale, plus 2 chopped celery stalks
1 cup heavy cream
DIRECTIONS
Brown the sausage-In a skillet set over medium heat, cook the sausage until no pink remains Drain the excess grease.
Add the cooked sausage, fresh or frozen potatoes, chicken broth, pepper, and salt to the slow cooker. Set the slow cooker to high and cook until the potatoes are tender.
Add the chopped broccoli or kale,celery and heavy cream to the slow cooker and stir gently to combine. Continue cooking until the kale is tender.
