ASPARAGUS, HAM, AND CHEESE PUFF PASTRIES

Sure, you can make puff pastry from scratch. And if you choose to do so, bravo! It takes a certain amount of grit and determination. But if you like a good workout–in patience mostly–then go for it! It will truly be a rewarding labor of love.

However, if making homemade puff pastry isn’t on your bucket list, read on for a luscious, cheesy pocket of goodness that you’ll put on repeat in your “must-make” rotation of dishes. And all you have to do in advance is thaw the dough (you’ll never know it came from a box).

INGREDIENTS (Serves 8)

1 bunch asparagus, ends trimmed (about 4 thin spears per bundle)
1 T. olive oil
Salt and pepper to taste
3 heaping tablespoons whole grain mustard, plus more for serving
2 T. honey, plus more for serving
1 pkg. frozen puff pastry (2 sheets), thawed
4-5 oz. prosciutto (1 or 2 slices per bundle)
6 oz. shredded smoked Gouda cheese
1 egg, beaten
Sesame seed or everything bagel seasoning, optional

DIRECTIONS

  1. Preheat your oven to 375 degrees and line a baking sheet with parchment paper.
  2. Coat the asparagus with oil; sprinkle with salt and pepper.
  3. In a small bowl, stir together the mustard and honey.
  4. Roll out the pastry sheets on a floured surface and cut into 8 squares.
  5. Spread 1 to 2 teaspoons of the honey mustard mixture over the center of the squares.
  6. Layer on prosciutto and asparagus.
  7. Top with cheese.
  8. Fold opposite corners of the pastry up and over the filling, overlapping the ends of the pastry.
  9. Transfer bundles to prepped baking sheet.
  10. Brush each with some of the egg and sprinkle with sesame seed or seasoning.
  11. Bake for 20 to 25 minutes, until golden brown.
  12. Serve hot with additional mustard and/or honey.
