Roasted Potatoes

ROASTED POTATOES

Here’s another excellent choise for a dinner side dish !

INGREDIENTS (Makes 6)

6 medium red potatoes
6 garlic cloves
1 T. vegetable oil
1 tsp. Italian seasoning
Coarse sea salt and black pepper to taste
½ C. butter
¼ C. shredded Parmesan cheese
 
DIRECTIONS

Grease the bottom and sides of a 10″ skillet with olive oil. Cut the potatoes crosswise into ¼”-thick slices and put the slices into a big bowl. Mince the garlic cloves and add to the potatoes, along with the oil and seasonings; toss to coat. Set the potato slices upright around the edge of the skillet and then fill in the center with the remaining slices. Scrape any remaining oil and seasonings out of the bowl and onto the potatoes. Cube the butter and lay the cubes over the top.

Cover the skillet and bake in a 375° oven for an hour, until the potatoes are tender. Uncover, sprinkle with the cheese, and bake for 20 to 30 minutes more to crisp slightly.
