CREAMY MAC & CHEESE
Another delicious recipe for an old favorite that can be served for lunch or as a dinner side dish.
INGREDIENTS (Serves 6)
3 C. milk
2½ C. water
Salt
1 (16 oz.) pkg. uncooked elbow macaroni
2 T. unsalted butter
1 tsp. Dijon mustard
1 (12 oz.) can evaporated milk
1 tsp. paprika or smoked paprika
2 C. shredded cheddar cheese, room temperature
Toppings such as cooked bacon, roasted red peppers, and/or chives
DIRECTIONS
In the pot of a kitchen-style Dutch oven, combine the milk, water, and a little salt. Bring to a boil and stir in the macaroni. Cook for 8 to 10 minutes, until al dente; do not drain!
Reduce heat, add the butter, mustard, evaporated milk, paprika, and salt to taste, stirring constantly. Add the cheese, a handful at a time, stirring constantly, until melted.
Serve piping hot topped as desired.
