SMOKED SALMON EGG BAKE
INGREDIENTS (Serves 8-10)
16 eggs
½ C. plus 2 T. milk
2 T. chopped fresh dill
1 tsp. salt
¼ tsp. black pepper
1 heaping cup halved grape tomatoes
2 T. capers, drained & rinsed
4 oz. smoked salmon, chopped
½ red onion. thinly sliced
4 oz. cream cheese, cut into small pieces
4½ tsp. “everything” seasoning blend*
DIRECTIONS
Preheat your oven to 300° and grease a sheet pan generously with coconut oil.
In a big bowl, whisk together the eggs, milk, dill, salt, and pepper. Pour into the prepped pan. Evenly distribute the tomatoes, capers, salmon, onion, and cream cheese over the eggs. Sprinkle the seasoning blend evenly over the top.
Bake for 25 minutes or until set. Cut into serving-size pieces.
*To make enough “everything” seasoning blend for this recipe, stir together 1 tsp. poppyseeds, 3/4 tsp. dried minced onion, 3/4 tsp. dried minced garlic, 1 tsp. black and/or white sesame seeds, and 1 tsp. coarse sea salt.
