CARAMEL APPLE PIZZA

This Caramel Apple Pizza is made with a soft homemade cookie crust, a creamy filling, fresh apples, and a drizzle of rich caramel apple dip. It’s like a caramel apple, but way easier to eat—and even more delicious. Perfect for parties, potlucks, or just a cozy night in!
INGREDIENTS (Serves 10 to 14)
For the cookie crust:
- 1/2 cup (1 stick) unsalted butter, softened
- 3/4 C. plus 2 T. sugar, divided
- 1 large egg
- 1/2 tsp. vanilla extract
- 1 1/4 C. flour
- 1 tsp. cream of tartar
- 1/2 tsp. baking soda
- 1/8 tsp. salt
- 1 tsp. cinnamon
For the creamy filling:
- 8 oz cream cheese, softened
- 1/3 C. caramel apple dip
For the toppings:
- 1 tsp. lemon juice
- 1/2 C. water
- 1 tsp. plus 2 T. sugar, divided
- 2 large apples,* cored & very thinly sliced
- 1/4 tsp. cinnamon
- 1/3 C. caramel apple dip
- 1/3 C. coarsely chopped or whole salted cashews
DIRECTIONS
- Make the cookie crust:
Preheat your oven to 375°F. Spray a 12″ pizza pan with nonstick cooking spray; set aside. In a big mixing bowl, cream together the butter and 3/4 cup sugar until fluffy. Beat in the egg and vanilla. In a separate bowl, whisk together the flour, cream of tartar, baking soda, and salt. Add the dry ingredients to the creamed mixture and mix well. With damp fingers, press the dough evenly into the prepped pizza pan. In a small bowl, stir together the remaining 2 tablespoons sugar and the cinnamon; sprinkle over the dough. Bake for 8 to 12 minutes or until golden brown. Let it cool completely. - Mix the filling:
In a medium bowl, beat the cream cheese and caramel dip until smooth and blended. - Assemble the pizza:
Spread the cream cheese mixture over the cooled cookie crust. In a big microwave-safe bowl, combine the lemon juice, water, 1 teaspoon of sugar, and the apples, stirring to coat well. Cook on high for 1 to 3 minutes or until apples just start to soften; stir and let cool. Drain off the liquid and pat the apples dry. Sprinkle the apples with the cinnamon and the remaining 2 tablespoons of sugar; stir until coated. Arrange the apple slices on top in a fun pattern, overlapping slightly (or just pile them on willy-nilly—no judgment here!). - Drizzle the caramel:
Drizzle the remaining 1/3 cup of caramel dip over the pizza, warming it slightly for easier drizzling, if necessary. Sprinkle with cashews. - Slice and enjoy!
