INGREDIENTS (Makes 4)
2 large spaghetti squash
Olive oil
Salt & black pepper to taste
1 onion, chopped
2 tsp. minced garlic
1¼ lbs. ground pork
1¼ lbs. ground pork sausage
1 (16 oz.) can petite diced tomatoes
2 tsp. dried oregano
2 tsp. Italian seasoning
Red pepper flakes to taste
½ C. ricotta cheese
½ C. cottage cheese
1 C. shredded mozzarella cheese
DIRECTIONS
Preheat the oven to 400°. Carefully slice each squash in half lengthwise and remoev the seeds. Rub oil over the cut edges and inside each half; season with salt and black pepper. Arrange on a rimmed baking sheet, cut side down; bake for 1 hour or until just tender.
Meanwhile, heat 1 tablespoon oil in a big saucepan over medium heat. Add the onion, garlic, and all the meat; season with salt and pepper. Cook until the meat is no longer pink, breaking it apart while it cooks; drain and return to the pan. Stir in the tomatoes, 1 teaspoon of oregano, and 1 teaspoon of Italian seasoning; add red pepper flakes, salt, and pepper as desired. Bring the mixture to a boil; reduce the heat to low and simmer for a few minutes to thicken.
Stir together the ricotta cheese, cottage cheese, and the remaining 1 teaspoon each oregano and Italian seasoning. Add red pepper flakes, salt, and pepper to taste.
Reduce the oven temperature to 350°. Scrape the inside of the squash with a fork to get long strands; pile the ricotta mixture, meat mixture, and mozzarella cheese on top. Bake for 30 minutes more, until heated through.
