Single Serving Quiche In A Cup
Make sure your mug is safe to use in the microwave.
Turn the mug over. It should say “microwave safe.” If it doesn’t, fill the mug with water and microwave on the highest setting for 1 minute. If the mug is cool enough to handle, it’s safe to use; if not, try another mug. Never microwave a mug with metallic decorations.
Always use hot pads when removing anything from the microwave. Even if your mug isn’t hot, the contents are, and you just don’t want to take the chance of burning yourself.
Times may vary slightly depending on your microwave and your mug. This recipe was tested in a 1,000-watt microwave, and the mug size used was 12 ounces.
Enjoy hot out of the microwave, right from the mug.
INGREDIENTS (Serves 1)
2 eggs
3 T. milk
Salt & pepper to taste
½ plain bagel
1 T. plus 1 tsp. cream cheese
¼ C. chopped cooked ham
Fresh chives, chopped
DIRECTIONS
Break the eggs into a greased mug and pour in the milk; add salt and pepper and whisk until well blended.
Cut the bagel and cream cheese into ½” pieces and add to the egg mixture. Stir in the chopped ham. Sprinkle chives on top.
Microwave on high for 2½ to 3 minutes or until the eggs are set.
Variations: Try using flavored cream cheese instead of plain or add a little shredded cheese, cooked bacon, or other herbs.
