INGREDIENTS (Serves 4)

½ C. finely ground raw coconut chips
½ C. finely chopped pecans
½ tsp. red pepper flakes
2 eggs
4 (4 oz.) tilapia filets

DIRECTIONS

In a shallow bowl, mix together the coconut, pecans, and pepper flakes. In another shallow bowl, whisk the eggs. Heat 2 tablespoons of oil in a big skillet over medium heat.

Working in batches, dip the fish into the eggs to coat both sides, then coat with the coconut mixture, patting well to help the coating stick. Fry two filets at a time in hot oil for 2 to 3 minutes on each side or until the crust is lightly browned and the fish flakes easily with a fork.
